Parmesan Chicken Spaghetti

Every summer our swim team has pasta nights. We all get together and eat lots and lots of pasta, trying to "carb up", the night before a competition. How cool is that? We are actually supposed to eat lots of carbs so we have lots of energy for the big race the next day. I get excited about these things because I love pasta! It's so easy to make and you can do so many different things with it.

So the other night I was craving some pasta and was thinking about making spaghetti. I wasn't really in the mood for ground beef though. I ended up making a sort of Parmesan chicken pasta. It was delicious!


Parmesean Chicken Spaghetti
1/2 c. extra-virgin olive oil
2 tablespoons butter
2 cups bread crumbs
Salt and Pepper, to taste
1 pound pasta
1 cup shredded mozzarella cheese
1/2 cup chopped fresh flat-leaf parsley
1 pound cooked, shredded chicken (I used a rotisserie chicken)
3 cups of spaghetti sauce

Heat butter and olive oil in a skillet over medium heat. Add the breadcrumbs, salt, and pepper. Cook until golden brown. Remove from pan and set aside.
Bring a large pot of water to boil. Add a teaspoon of salt and the pasta, cook until the pasta is tender. In a large skillet, over medium heat, mix the pasta and chicken.


After the chicken, stir in the bread crumbs, then the parsley.


Now mix in the spaghetti sauce and mozzarella cheese. Transfer into a baking dish and place covered, in a warm oven until ready to serve.
